GABRIELE MARZO – Head Chef
A highly creative chef, Italian-born Gabriele Marzo has enjoyed over a decade of top level experience in leading European hotels and restaurants.He arrives at Tompkins from the two Rosette Clarkes Restaurant in Kensington where as Head Chef he oversaw a team of 10 people and devised a daily changing seasonal menu.
Having trained in Rimini, Gabriele began his career in some of Italy’s most renowned establishments, the 5-star Hotel Splendido in Portofino among them.
Travelling to the UK in 2006 to further his career, he took on the role of Chef de Partie at the Michelin star Zafferano restaurant in Knightsbridge, and quickly moved up the ranks. From there Gabriele moved to The Westbury Hotel in Mayfair.

In the intervening eight years, turnover has increased from £150,000 to £18 million.
The Inc Group’s portfolio now includes Admiral Hardy, The Coach and Horses, The Spread Eagle, Trafalgar Tavern and The Elbow Rooms. The company is also the biggest bar and restaurant operator at the O2 Arena.
In March 2009 the company opened high rise cocktail bar, The Attic, on the 50th floor of Pan Peninsula. This was followed in June by the launch of Union Square, its new flagship restaurant at the O2.
2010 will see The Inc Group go from strength to strength. Aside from the launch of Tompkins, March also saw the official opening of Battery on the former Ubon by Nobu site in Canary Wharf.
Inc Group also owns Instinct Events, a sister company that was launched in 2007 to capitalise on the venues in the group’s portfolio.
